Head Chef position available at Det Lille Hotel in beautiful Risør!

Det Lille Hotel is looking for a talented ans experienced Head Chef to manage the full kitchen operations of our two popular restaurants.

We are looking for a passionate, experieneced and talented Head Chef to join our team with the responsibility to mangage to complete kitchen operations of our two popular seafront restaurants – Tollboden 1865 and Park Cafè.

As a key member of the hotel`s Management, you will be responsible for delivering an exceptional dining experience for our guests while ensuring profitability and a friendly, creative and professional working environment.

Experience Needed:

  • Previous Kitchen Experience: A minimum 2 years working as Head Chef in Norway with responsibility for menu creation, food cost calculations, inventory, ordering, delivery and quality maintaining routines.

  • Staff Management and leadership: Ability and desire to lead by example and manage the kitchen team effectively. The Head Chef must be hands-on, offering guidance, training, and support to the chefs, as well as ensure good communication and a positive working environment, while maintaining high standards of food preparation and service. Experience with recruitment and having a large professional network is a plus.

  • Culinary Knowledge: A strong understanding of cooking techniques, food safety standards, and kitchen operations. Familiarity with preparing fresh, seasonal ingredients and creating innovative dishes.

  • Time Management: Ability to manage time effectively, both in planning and exectuting of duties.

  • Adaptability: Able and willing to keep adapting and developing the menus and products to always creating the best possible experiene for the guest while ensuring highest possible profitability for the hotel.

  • Customer-Focused: Endure food quality and presentation meet guest expectations. Ability to address any kitchen-related issues in a professional and effective manner to maintain guest satisfaction and exceed customer expectations.

Arbeidsoppgaver

Key Responsibilities:

  • Menu Creation & Food Cost calculations: Collaborate with management to develop seasonal menu options, with focus on correct food cost calculations, local produce and high quality dishes that align with the standards of the hotel and De Historiske Hotel og Spisesteder.

  • Food Safety & Hygiene: Ensure that all kitchen operations adhere to current food safety standards as well as always maintain a clean and well organized workspace.

  • Inventory Management and cooperation: Keep full control on kitchen inventory, ordering routines and ensure proper stock levels. Communicate and cooperate closely and openly with Management.

  • Food Preparation & Cooking: Prepare and cook high-quality dishes according to the restaurant's menu, ensuring consistency and presentation.

  • Customer Satisfaction: Ensure that food quality and presentation meet or exceed guest expectations, addressing any issues or concerns promptly.

  • Time Management: Manage team shifts buy planning and approving shifts accorind to current regulations. Manage prep, cooking and cleaningn times whilse also ensuring all orders are completed in a timely manner.

  • Collaboration: Work closely with front-of-house staff to ensure seamless communication and exceptional guest service.

Det Lille Hotel consists of 9 double rooms in the city's old Customs House and 19 hotel suites in painstakingly restored, historic buildings scattered around one of the world's best-preserved wooden towns. All the suites have a unique theme that tells about the city's rich maritime history.

You will find the hotel in the center of Risør in buildings from the 1850s and in a listed house from 1750 in Buvika – beautifully situated by the sea and Risør Trebåtbyggeri.

The hotel has two restaurants – the popular Park Cafè with a-la-carte and wood fired pizza oven, and the fine dining restaurant Tollboden 1865.

In addition to regular restaurant operations the hotel is known for arranging beautiful weddings, conferences and a plethora of events.

The hotel is a proud member of «De Historiske Hotell og Spisesteder» and has been awarded Norwegian Cultural Heritage's Olavsrosa as well as the county municipality's Building Conservation Award
